Bonito with black bean sauce
This dish uses a Chinese seasoning called touchi, which is made from fermented black beans. It is rich in umami, which helps to mellow the spiciness of the chili pepper
How to make it

Cut the bonito into slices about 8mm thick and arrange on a plate

Place the black bean sauce ingredients in a bowl and mix well
