Frittata sandwich
Crack the eggs into a bowl, add the Parmesan cheese, sugar and salt and mix well
Heat olive oil in a frying pan over high heat, add chopped garlic and fry until fragrant. Add the parboiled and cut broccoli into bite-sized pieces, sprinkle with salt and pepper, fry briefly, and then remove to a tray
Add butter to the frying pan in step 2, add the julienned zucchini and thinly sliced onion, and fry until softened. Remove from heat
Add the diced tomatoes, the broccoli from [2], the zucchini and onion from [3], and the cream to the egg mixture and mix well
Heat a frying pan with olive oil over high heat and pour in the egg mixture from [4]. When the edges begin to solidify, add torn butter, cover and steam. When the butter has melted and the egg mixture has solidified, flip the pan over, cover and steam for 2-3 minutes
Use 12 slices of bread. Spread a thin layer of mustard butter on one side of each slice
Remove the frittata to a cutting board and cut it to fit the size of the bread. Arrange it on top of the bread from [6]
Place another slice of bread on top, press down with your hands, and cut into bite-sized pieces. Serve on a plate and you're done
