How to make it

Place the hanpen in a plastic bag and mash it until it becomes like a paste

Finely chop the celery and coat it in flour. Place it in the bag (1) and mix with the hanpen surimi

Divide [2] into 4 equal parts and wrap each piece of diced cheddar cheese in it. If it feels watery when you touch it, sprinkle some cornstarch on top

Place in deep-frying oil heated to 160°C and fry for 2-3 minutes, rolling with chopsticks. When you pierce the chicken with chopsticks and the cheese inside has melted a little, it's ready. Remove to a wire rack and drain the oil

Serve in a bowl and it's finished.
