Fried bitter melon with bacon wrapped in bitter melon

Remove the pith from the bitter melon and cut it into 5-6cm long sticks. Sprinkle salt on it and rub it in to release the moisture, then rinse off the salt under running water and pat dry with kitchen paper
Layer the bacon and bitter melon cut into strips and wrap them up in strips of roasted seaweed. Secure the edges of the seaweed with flour paste
Arrange [3] on a plate and pour the basic batter over it, letting it mix well
Place in deep-frying oil heated to 170°C and fry for 2-3 minutes, rolling with chopsticks. Once the batter has taken on a nice brown color, remove to a wire rack and drain
Serve in a bowl and it's finished.
