Fried bitter melon with bacon wrapped in bitter melon

Remove the cotton inside of the bitter melon and cut it into sticks 5-6cm long. Shake with salt and rub it, and when moisture comes out, rinse the salt off with running water and wipe off the water with kitchen paper.

Layer the bitter melon cut bacon and bitter melon and roll them round with roasted seaweed cut into strips. It is best to fasten the edges of the seaweed with flour glue.

Arrange [3] on a plate and pour the basic batter over it to blend.

Place in frying oil heated to 170°C and fry for 2-3 minutes, rolling with chopsticks. Once the batter has a moderate color, remove it into a net and drain the oil.

Serve in a bowl and it's finished.
