Sweet potato zenzai

Straining sweet potatoes will give them a smoother texture, but if you want to enjoy the texture, you don't have to strain them. The amount of granulated sugar you need is roughly 25-50g, and you can adjust it depending on the sweetness of the sweet potato. You can also turn it into a pudding by adding dissolved gelatin

How to make it
1

Steam the sweet potatoes in a steamer with the skin on until soft, then peel them while they're still hot. It's a good idea to cut the skin-on sweet potatoes into round slices and set aside 2-3 slices to use as a topping

2

Put the sweet potato into a blender, add half of the milk and blend. Once mixed well, add the remaining milk and blend again

3

Put (2), granulated sugar, and honey into a frying pan and heat while mixing thoroughly with a rubber spatula

4

Once the mixture is well mixed and warmed, remove from the heat and pour into serving bowls. Top with steamed sweet potato and shiratama (rice flour dumplings) to taste
