Potato salad Genovese style
Peel the potatoes, cut them into bite-sized pieces and boil them in water
Drain the boiled potatoes, put them in a pot and heat, mashing them with a wooden spoon to evaporate the water
Add vinegar and A to the potatoes after the water has evaporated and let cool
Finely chop the onion, soak it in water, squeeze out the water, add it to step 3 along with the mayonnaise and mix well
Place arugula on a plate, top with 4, drizzle with olive oil, sprinkle with parsley and it's done
