Scalloped skewer
Wipe off the scallop trabecula using kitchen paper or something similar before sticking it on a skewer.
Place the net on a gas stove and lightly grill it on top. Once the surface is lightly browned, remove it into a batter and place it on a side of beauties.
Serve it in a bowl lined with bamboo leaves and it's finished.
