Herring soba

This dish is a popular local dish in Hokkaido and Kyoto. You can enjoy the combination of sweetly simmered herring and soba noodles. I used pre-cooked dried herring, but if you can't find it, you can use commercially available sweetened herring instead

How to make it

Place the dried soba noodles in a tray, pour in enough water to cover the noodles, and leave to soak for about 10 minutes. Then, place in boiling water and boil for about 3 minutes, then quickly cool in ice water and drain in a colander

Put Happomibijin and water in a pot, put on the fire and bring to a boil

Place the soba noodles in a bowl and top with the pre-cooked dried herring

If desired, top with washed green onions and shichimi pepper. Pour the sauce from [2] over the dish and it's done

  • Happo-mibijin (can be used as a substitute with soy sauce + mirin)

    200cc
  • Washed green onions for topping
