Delicious Chinese-style potatoes

Peel the potatoes, cut them into bite-sized pieces, place them in a steamer, and steam them for about 30 minutes.
Place the frying pan over low heat, add scallion oil, minced ginger, and green onions, and stir-fry slowly at a low temperature to give it a aroma.
Once the oil has warmed up, add the potatoes and Chinese soup and simmer while lightly disintegrating.
When the mixture becomes thick, add salt and sugar to taste, then remove from heat.
To finish off, pour in some scallion oil and serve it in a bowl and it's done.
