How to make it

Peel the potatoes, cut them into bite-sized pieces, place them in a steamer and steam for about 30 minutes

Place a frying pan over low heat, add scallion oil, finely chopped ginger and green onions, and fry slowly over low heat to bring out the aroma

Once the oil is hot, add the potatoes and Chinese soup and simmer while lightly breaking them up

Once it thickens, add salt and sugar to taste and remove from heat

To finish, drizzle with scallion oil, then serve in a bowl
