Prepare the soy sauce-marinated egg yolks.
Put all the ingredients except the egg yolks into a bowl and mix well, then add the egg yolks and let it sit for about 30 minutes.
Cut the apples into strips so that the skin is at the edge, creating an accent. Soaking them in lemon water will prevent them from discoloring
Remove the fat from the beef and stack 2-3 slices on top of each other. Sprinkle lightly with salt and pepper and roll tightly into a rod shape. Using plastic wrap makes it easier to roll
Cut into 2-3cm wide pieces and pierce each piece with a pick. Press the cut surface to form a shape
Heat a frying pan, add a thin layer of oil, and fry the beef from step [4]. Once one side is cooked, flip it over, turn off the heat, and cook it over in the residual heat
Serve in a bowl and garnish with broccoli sprouts, apple, and egg yolk pickled in soy sauce
