Fried egg with mushrooms
Slice the mushrooms into thin slices about 2-3mm thick
Heat a frying pan and add mayonnaise and mushrooms and fry. When the mushrooms have shrunk, add dark soy sauce and transfer to a bowl
Crack the eggs into the bowl (2) and mix well
Add olive oil to a clean frying pan and heat it, then pour in half of 【3】. When it starts to solidify, use a rubber spatula to scrape it off and push it to one side
Pour the remaining egg mixture into the empty space and use a rubber spatula to shape it into a ball. Turn it over and brown the whole surface
Remove from the oven and place on a rolling mat, then shape into a rectangle
Cut into bite-sized pieces and arrange in a serving dish. Top with shichimi pepper to taste
