Kiwi Custard Gratin
Add butter, banana, and 20g of granulated sugar to a heated frying pan and caramelize (5 minutes over medium heat)
Once the color of [1] has turned golden brown, turn off the heat and add 30cc of orange curacao, then turn the heat back on and flambé
In another frying pan, gently heat the custard cream and milk, then transfer to a bowl and add the heavy cream, 10cc of orange curacao, and lemon juice, and mix with a rubber spatula
Place 50g of [3] in each gratin dish
Sprinkle 3g of granulated sugar on each plate of [4] and pour melted butter over the top
Bake [5] in an oven at 220°C for 15 minutes. Once cooked, remove from the oven and sprinkle mint leaves on top
