Kiwi Custard Gratin

Caramelize the butter, banana, and 20g granulated sugar in a heated frying pan. (5 minutes on medium heat)

Once the color in [1] is turned golden in general, turn off the heat and place 30cc of orange Curacao, then turn it on again and set it on flambé.

Lightly warm the custard cream and milk in another frying pan, then transfer to a bowl and add 10cc of fresh cream, orange curacao, and lemon juice, and mix with a rubber spatula.

Serve 50g of [3] per gratin dish.

Sprinkle 3g of granulated sugar on each dish and pour melted butter over top.
Bake [5] in the oven at 220°C for 15 minutes. Once cooked, remove from the oven and sprinkle mint leaves on top.
