Chocolate sponge fabric

Divide the eggs into egg yolk and egg whites. Chop the chocolate finely and melt it in a hot water bath. Apply butter (not included in the portion) to the mold and paste the cooking sheet.
Put half the egg yolk and granulated sugar in a bowl and whisk with a hand mixer until it is whitish and thick.

Put the egg whites in another bowl and whisk, then add the remaining granulated sugar in two portions, whisk thoroughly until the corners are formed.

2. Sieve cocoa powder into egg yolk with a tea strainer and mix.
Add 1/3 of the egg whites from 3. to 4. and mix with a rubber spatula.
Return 5. to bowl 2. and mix gently to avoid crushing the foam.
6. Add the chocolate little by little while mixing and mix. Pour this into a mold to flatten the surface.

Place 6. on a baking sheet and pour in hot water until about 1/3, bake in an oven at 160°C for about 20 minutes, remove and cool.
