Chocolate sponge fabric
Separate the eggs into yolks and whites. Finely chop the chocolate and melt it in a double boiler. Grease the mold with butter (not included in the recipe) and line it with parchment paper
Put the egg yolks and half of the granulated sugar in a bowl and beat with a hand mixer until pale and thick
In another bowl, whisk the egg whites until they turn white, then add the remaining granulated sugar in two batches and whisk until stiff peaks form
2. Sift the cocoa powder into the egg yolks using a tea strainer and mix
Add 1/3 of the egg whites from step 3 to step 4 and mix with a rubber spatula
Return 5. to the bowl in 2. and mix gently, being careful not to crush the bubbles
While mixing 6., gradually add the chocolate and mix until combined. Pour into the mold and smooth the surface evenly
6. Place on a baking tray and add hot water up to about 1/3 of the way up, bake in an oven at 160°C for about 20 minutes, remove and let cool
