Orange compote

Make an orange compote. Peel the orange peel.

Put A. in a deep pot where the oranges are soaked, bring to a boil, add 1. and simmer for 2 minutes and let cool naturally.
Make an orange confit. Slice the orange peel, carefully removed from the white cotton part, into 1mm wide slicing.

Sliced orange peels quickly in boiling water and pour them into a boiled colander. (Removes bitterness and surface dirt)
4. Put in a pot and pour in water until it is poured over high heat for 10 minutes.

Add lemon juice to 6. Once it's caramel colored, remove from the heat and cool. (Approximate: 18-20 minutes)
2. Place in a bowl and garnish with orange confit and mint.
