Orange compote
To make the orange compote, peel the oranges
Put A. into a pot deep enough to cover the oranges, bring to a boil, add 1., simmer for 2 minutes and let cool naturally
To make the orange confit, carefully remove the white cottony part from the orange peel and cut it into 1mm thick strips
Boil the orange peel in boiling water, then drain in a colander (to remove any bitterness and surface impurities)
4. Place in a pot, add water until it just covers the ingredients, and simmer over high heat for 10 minutes
6. Add lemon juice and when it turns caramel color, remove from heat and let cool (approximately 18-20 minutes)
2. Place in a serving dish and garnish with orange confit and mint
