Stir-fried edamame
Boil the edamame beans in boiling water with a little salt (not included in the recipe) for 2-3 minutes and remove the skin and membrane. Finely chop the bacon, garlic, and red chili pepper
Heat 1 tablespoon of fragrant oil in a frying pan and fry the garlic, red pepper and bacon until fragrant
Add sake and Chinese soup to [2] and simmer to bring out the flavor of the bacon
Season with salt, pepper and sugar, add the edamame beans and simmer until the sauce is reduced by half, then thicken with water-dissolved potato starch
To finish, add a small amount of scallion oil to add flavor, then serve on a plate
