Italian cold noodles

Soak shallots and onions in water to remove the odor and make them crisp. It is also effective in preventing summer fatigue.
How to make it

Soak the firm tofu in ice water for about 10 minutes.
Julienne the shallots and rinse them in ice water to remove the sliminess. Julienne the onion and perilla leaves and rinse them in water, then drain.

Place the shredded vegetables in a bowl, add [A] and mix.

Cut the tofu that has been soaked in ice water into three equal parts, place it on a plate, and pour [2] over it. Topped with assatsuki and poured in olive oil and it's finished.
