Winter melon and minced meat mapo
Peel the winter melon and remove the pith, boil it until it is soft enough to pierce with a bamboo skewer, then cut it into irregular pieces
Heat 1 tablespoon of scallion oil in a frying pan, add the seasonings and stir fry. When the aroma comes out, add the minced meat and stir fry over medium heat, being careful not to burn it
Once the minced meat is cooked through, add chopped winter melon, sake, Chinese soup, chili bean paste, and soy sauce, cover, and simmer
Once the flavor has soaked into the winter melon, add sugar and black bean paste, and thicken with water-dissolved potato starch
To finish, add chili oil and sesame oil to add flavor and it's done
