How to make it

Remove the bitter melon cotton with a spoon and rub with salt.

Once the bitter melon is soft, dice it

Cut the beef to the same size as the bitter melon, then heat 100cc of salad oil in a frying pan and fry the beef

Heat 1 tablespoon of scallion oil in a frying pan and fry the seasonings. Once fragrant, add the bitter melon and Chinese soup, then cover and simmer

Once the bitter melon is soft, season with the seasonings in [A], add the blanched beef and stir-fry until the moisture evaporates. Finish by adding sesame oil and red chili pepper

Serve with washed lettuce in a bowl
