Octopus and spicy tofu

Pour boiling water over diced silken tofu, blanch, and drain
Heat 1 tablespoon of scallion oil in a frying pan and fry the ginger, garlic, white onion, and octopus puree
Once the aroma has come out, add the silken tofu and Chinese soup from [1] and simmer for about 3 minutes
Season with salt, pepper and sugar, then add the red vinegar
Thicken with water-dissolved potato starch, then drizzle in the fragrant oil and it's done
