Octopus spicy tofu

Pour the diced silk tofu with boiling water, blanch and drain.
Heat 1 tablespoon of scallion oil in a frying pan and fry the ginger, garlic, white green onions and octopus puree.
Add the silk tofu from [1] and Chinese soup to the aromatic scent and simmer for about 3 minutes.
Season with salt, pepper and sugar, then add red vinegar.
Thicken it with water-dissolved potato starch and pour in the persimmon oil and you're done.
