Stir-fried beef liver and honey with sauce

Heat a frying pan without oil and fry chopped maitake, shimeji and shiitake mushrooms. Once they have softened and become fragrant, season lightly with aromatic oil and salt and spread on a plate
Heat 1 tablespoon of salad oil in a frying pan and fry the beef liver. Once the surface is golden brown, transfer to a tray
Heat 1 tablespoon of scallion oil in the same frying pan used to cook the liver, add the seasonings in (A), and mix well to emulsify
Return the browned beef liver to the frying pan and mix well with the sauce. Place on the plate with the mushrooms spread on top. Garnish with kinome leaves and it's done
