Sake-steamed ponzu sauce
Spread the silver cod fillets on a bat and sprinkle strong salt. Let it sit for about 10.
Once the water comes out of [1], discard the water and add sake, kelp, and 3cm wide slices of green onions. Steam this in a steamer for 15 minutes.
Serve it on a plate and add ponzu sauce to complete.
