Finely pound the peeled shrimp with the back of a knife until it resembles a paste

Add mayonnaise to (1) and mix well. Place two equal portions on top of the slices of bread with the crusts cut off, spreading the mayonnaise evenly. Add the green onions and roll up from the front, securing the end with a toothpick

Place in oil heated to 175°C and fry for 1-2 minutes, turning halfway through. Remove from the frying pan when it has browned. If using frozen shrimp, fry for a little longer to ensure it is cooked through

Cut into bite-sized pieces and arrange in a serving dish
