Stir-fried mushrooms and pork with miso

Rather than frying the mushrooms as they are, it's better to first roast them and then mix in the other ingredients so that the flavors can penetrate better. I used bell peppers this time, but you can also substitute other vegetables such as eggplant or bean sprouts

How to make it

Split the mushrooms by hand or cut them into bite-sized pieces with a knife. Remove the seeds from the bell pepper and cut it into thin strips. Cut the pork belly into bite-sized pieces

Dry fry the mushrooms in a frying pan, and when they are softened, add the pork belly

Once the pork belly is cooked through, add the bell peppers and stir fry briefly. When it is done, add the sesame oil and red miso paste and mix well

Remove from the heat and serve in a bowl to complete.
