Edamame and rocks

If you add too much egg yolk to the edamame, it will likely fail, so the key is to add it in small amounts so that it coats the whole thing. If you add too much, you can adjust the amount by adding more flour

How to make it
1

Parboil the edamame beans, remove the skin, and wipe off the excess water. Place in a bowl and sprinkle with flour

2

In another bowl, beat the egg yolks and add them little by little to (1) while mixing

3

Heat the frying oil to about 160°C. Dip a spoon through the oil, then scoop up (2) with the spoon and place it in the oil. Remove from the heat and place on a wire rack before it browns too much. Cook for about 1 to 2 minutes

4

Remove to a wire rack and sprinkle with salt while still hot. Serve in a serving dish and you're done
