Stir-fried bitter melon and chicken thighs

Cut off both ends of the bitter melon, then split in half lengthwise, remove the cotton inside with a spoon before using it for cooking. If you cut it thinly, you won't be too concerned about the bitterness.

Cut the bitter melon into thin slices about 1mm wide, and cut the chicken thigh into 1-2cm cubes.

Put a frying pan with olive oil over high heat and grill the chicken thighs. Add the bitter melon and stir-fry, and when it's soft, add [A].
