Hijiki with carrot dressing
This unique dish looks like sea urchin and can be enjoyed like a salad
How to make it

Soak the hijiki in water overnight, parboil for 5 to 10 minutes, then drain in a colander

Prepare the carrot dressing (see separate recipe)

Place the drained hijiki in a bowl and make a well in the center. Place the carrot dressing in the center and it's done
