Abalone tsukuda stew
Remove the abalone from the shell and use the string section. Wash under running water to remove any dirt.
Transfer to a pot, pour in a little more water than the whole thing can be soaked, and place on the heat. Boil for about 20 minutes, leave enough to soak it in, and discard any excess boiling juice.
Add dark soy sauce and sugar, and simmer while removing any scum. Simmer for about 10 minutes and when the water is almost gone, add dark soy sauce and sprinkle with the shichimi chili pepper.
After quickly mixing the whole thing, remove from the heat and serve in a bowl to complete it.
