How to make it

Remove the abalone from the shell and use the string part. Wash it under running water to remove any dirt

Transfer to a pot, add a little more water than is needed to cover the whole thing, and bring to a boil. After boiling for about 20 minutes, discard the excess water, leaving just enough to cover the whole thing

Add the dark soy sauce and sugar and simmer, skimming off any scum as you go. After simmering for about 10 minutes, when the water has almost evaporated, add the dark soy sauce and sprinkle with shichimi pepper

Once everything is mixed together, remove from the heat, serve in a bowl and it's done
