I always imagine a fish laying at the 12 o'clock position on the clock. Turn the plate with the base of your left hand, not touching the knife, and always lay the fish in the gap in the 12 o'clock area.

If the fish has skin, peel it off using a knife and hand.

Hold the body with the fingers on your left hand and hold the knife in your right hand. Pull the knife from the root towards the top and cut it very thinly.

Place the cut fish on top of the plate (the clock is at 12 o'clock). Use the base of your left hand, turn the plate to the right, and always lay the fish in the 12 o'clock space.

Once the plate is filled with fish, layer several sashimi as shown in the photo. Collect them from the bottom and make roses.

Decorate the roses you have made in the center of the plate and add condiments (such as a green onion or kettle) to complete the dish. Serve with ponzu sauce.
