Abalone and asparagus stir-fried butter

When frying abalone, the key is to add salad oil to a frying pan at room temperature, then add the abalone meat before litting. Slowly heat can prevent the abalone from becoming stiff.

How to make it

Peel the asparagus and cut into bite-sized pieces. Remove the abalone from its shell, remove the liver, then slice the flesh into thin slices about 4-5mm thick.

Put salad oil in a frying pan, add the abalone meat and then heat it over high heat. Once the oil has gotten used to the whole thing, add asparagus.

When the asparagus has started to soften, add butter and dark soy sauce, mix and remove from heat.

Serve in a bowl and it's finished.
