Sweet potatoes with spicy sauce
Cut the sweet potato into 1cm slices and the apricot syrup into bite-sized pieces. Parboil the snack peas
Pour plenty of oil into a frying pan, heat over medium heat, and add the sweet potatoes. Fry for 3-4 minutes, then remove to a wire rack. Once cooled, transfer to a paper towel and drain the oil
