Italian style of fried rice cakes
Cut the rice cakes into 1-2cm cubes and fry in oil heated to about 160°C for about 3.5 minutes, then remove to a wire rack and drain
Place on a grill rack and press the Parmesan cheese on top
Pour melted butter over the top and bake in the toaster oven for 2.5 minutes
Once the surface is lightly browned, you can remove it from the oven. Place it on a plate and drizzle with coarsely ground black pepper and olive oil to finish
