Wonton soup with rape flowers
Parboil the rape blossoms, chop them finely, then wrap them in a paper towel and squeeze to remove all the water
Make the wonton filling. Put all the ingredients in a bowl and knead well with your hands. Once it starts to come together, add the rape blossoms from step (1) and mix again
Wrap the filling in the wonton wrapper. Fold it into a triangle, twist the edges, and squeeze to form a shape
Bring plenty of water to a boil, add the wontons and boil for about 5 minutes
Put Chinese soup in another pot and heat it, then add salt to taste. It should be a little thicker than a clear soup. Pour the soup into serving bowls and float the wontons on top
Finish by topping with rape blossoms
