Tempura with meat

Use pre-cooked herring and butterbur sprouts. Cut the herring into thirds
Cut the butterbur sprouts to the same length as the herring fillets, then stick toothpicks into them and group four pieces together
Coat the fish lightly and evenly with flour, then dip it in the basic batter and deep fry in oil heated to 160°C for 2-3 minutes. Once the batter has browned, remove it onto a wire rack and drain the oil
Place in a serving dish and, if available, garnish with deep-fried herring belly bones to complete the dish
