Amakusa Daio fried chicken wings

This dish uses chicken wings from the Amakusa Daio, a brand of chicken from the Kumamoto region. Amakusa Daio chicken is a little larger than regular chicken and is quite filling, so we recommend cooking it in a way that makes it more satisfying, such as deep-frying the wings

How to make it

Put [A] and the chicken wings into a bowl and rub together with your hands. Leave for about 2 minutes to season

Coat the whole with potato starch and deep fry in oil heated to 170°C. After about 4 and a half minutes, remove from the frying pan and place on a wire rack to cook in the residual heat for 1-2 minutes

Place back into the oil and fry again, adding more oil with a ladle. After 2-3 minutes, remove to a wire rack to drain and serve on a plate

Garnish with lemon wedges and sprinkle with Japanese pepper to finish
