This dish is made with chicken wings from a variety of chicken called Amakusa Daio, a brand chicken from the Kumamoto region. Amakusa Daioh is a little bigger than regular chicken and is tastier, so we recommend using a delicious cooking method, such as deep-fried chicken wings.

How to make it

Put [A] and chicken wings in a bowl and knead them with your hands, then leave for about 2 minutes to season them.

Sprinkle the whole potato starch and place in deep frying oil heated to 170°C. After about 4 and a half minutes, remove it, put it on a net and cook it over the residual heat for about 1-2 minutes.

Place again in the frying oil and fry twice, pour the oil on top. After about 2-3 minutes, remove it on a net, drain the oil, and place in a bowl.

Add the chopped lemon and sprinkle with some sansho pepper and finish.
