Sashimi of lobster
The lobster's head is removed, and after a quick hot water is added, remove the shell, cut its flesh and soak it in ice water. Keep the head and shell as they will be used for presentation.
Place the shredded leaves in a bowl, top with shredded cucumbers and shredded pumpkins. Serve the lobster flesh from [1] and serve with fresh wasabi.
