Sashimi of lobster
Remove the head from the spiny lobster, blanch briefly, remove the shell, cut up the meat and place in ice water. Set aside the head and shell as they will be used for plating
Place shiso leaves in a bowl, then top with shredded cucumber and shredded pumpkin. Arrange the spiny lobster meat on top and garnish with fresh wasabi to complete the dish
