Eringi herb crumbs

Combine the ingredients A to make herb crumbs.
Cut the eringi in half lengthwise, make an oblique cut into the surface, and salt and pepper on both sides.

Pour flour → egg → herb crumbs on the cross section in the order of the mixture, and grill over low heat with the soaked side down. Once it's browned, turn it and bake the cut surface.

Place on a plate with herb crumbs on top and place parsley on it.
