Eringi herb crumbs
Combine ingredients A to make herb breadcrumbs
Cut the king oyster mushrooms in half lengthwise, make diagonal cuts on the surface, and season both sides with salt and pepper
Dip the cut surface in flour, egg, and herb breadcrumbs in that order, then place the coated side down and cook over low heat. Once golden brown, flip it over and cook the cut surface as well
Place the herb breadcrumb side up on a plate and garnish with parsley
