Uma vinegar
It's very delicious when you make vinegared dishes using this umami vinegar as a base. If you don't have time to cool, you can cool it on ice water.
How to make it

Put the mirin in a pot, boil for about a minute, and then boil.

Add all the remaining ingredients to [1] and bring to a boil and let it cool.

Once it cools, soak it on top of the colander and strain it tightly to finish.
