How to make it

Mix the egg whites, stock, and salt well in a bowl and strain through a fine sieve

Place 15g of mozzarella cheese into each bowl and gently pour in (1). (If any bubbles appear, break them up with chopsticks.)

Place in a steamer and steam for 12 minutes at a slightly higher temperature
