Mist
Mix the egg whites, dashi and salt well in a bowl and strain it through a fine mesh tray.
Place 15g of mozzarella cheese in a bowl and gently pour 【1】 onto it. (If you have any bubbles, crush them with chopsticks or something.)
Put it in a steamer and steam it at a slightly higher temperature for 12 minutes and it's finished.
