Winter melon and clam soup
Peel the winter melon and cut it into bite-sized squares, then boil it in boiling water with a little salt and salad oil (not included in the recipe), then drain. Remove the sand from the clams
Heat 1 tablespoon of scallion oil in a pot, add chopped white onion and ginger and stir fry until fragrant, then add clams and stir fry. Once the oil has coated, add sake and Chinese soup and bring to a boil
Once the clams have opened, remove the scum and add the boiled winter melon. Cover and simmer for 2 minutes. Once the soup becomes cloudy, taste and add a little salt and pepper to finish
