Winter melon and clam soup

Peel the winter melons and cut into bite-sized squares, boil them in boiling water with a small amount of salt and salad oil (not included in the amount) and drain. Remove the clams from the sand.

Heat 1 tablespoon of scallion oil in a pot, add the chopped white green onions and ginger and stir-fry. When the aroma is starting to appear, add the clams and fry. Once the oil has flowed, add sake and Chinese soup and bring to a boil.

Once the clams are open, remove any scum and add boiled winter melon. Cover and simmer for 2 minutes. Once the soup is cloudy, add some salt and pepper to taste and finish.
