Stir-fried eggplant with miso
Cut the eggplant into chunks and fry in sesame oil until soft
Add the combined miso paste, sugar, mirin, and soy sauce
Add the grated ginger and sauté over low heat until the liquid has evaporated
Finish by sprinkling white sesame seeds on top to enhance the flavor
Serve in bowls and enjoy hot
