Stir-fried eggplant with miso
Eggplant goes well with oil, and just frying it will add a delicious flavor. Add green onions to the toppings to make them more colorful.
How to make it

Chop the eggplant into pieces and saute in sesame oil until soft.

Add the combined miso, sugar, mirin and soy sauce.

Add grated ginger and fry on low heat until the juices are gone.

Finish with white sesame seeds to enhance the flavor.

Serve in a bowl and enjoy piping hot.
