Stir-fried cucumber and shrimp
After preparing and seasoning the shrimp, quickly boil them in boiling water and remove from the heat
Cut the peeled cucumber diagonally into bite-sized pieces, place in a bowl, add salt and rub in. Once the water has come out, rinse lightly under running water and drain well
Heat 1 tablespoon of scallion oil in a frying pan and fry the seasonings until fragrant

To finish, thicken the sauce with water-dissolved potato starch and drizzle with scallion oil to complete the dish
