Arugula dried shrimp salted noodles

Heat 1 tablespoon of salad oil in a frying pan and fry the ginger and dried shrimp
Once the dried shrimp is fragrant, add sake, Chinese soup stock, salt, and black pepper and simmer. Add half of the arugula, cut into bite-sized pieces
Once the arugula has softened, add the steamed noodles and mix well
Add the remaining arugula and stir-fry until the water evaporates. Add 1 tablespoon of scallion oil and it's done
