Fig and sea bream salad

Peel the fig and cut it into pieces. Slice the sea bream into small pieces that are easy to eat. Place this on a plate and let it cool.

Add the umami vinegar and agar in a pot and simmer for about 5 minutes.

Remove [2] from the heat and cool in ice water. Mix well with a spoon until it becomes jelly. Place this on top of the fig in [1].

Finish by sprinkling sprinkling sprinkling some black pepper.
