Cheese noodles
Boil the somen noodles according to the package instructions, then drain and place in ice water
Put [A] into a pot and heat. Once boiling, add the chicken and shiitake mushrooms
Once the chicken is cooked through, add the somen noodles (1) and the pre-boiled shrimp
When the soup boils again, add the shredded mozzarella cheese, stir once, remove from the heat and serve in a serving dish. Top with mitsuba (Japanese parsley) if desired
