Pickled bean sprouts
Lightly parboil the bean sprouts, then drain in a colander, sprinkle with salt, and set aside to drain
Place the peanuts in a plastic bag and roughly crush them using a bowl or glass jar
Once the bean sprouts have cooled, transfer them to a bowl and add the crushed peanuts and umami vinegar
Serve in a bowl and it's finished.
