Edamame quick stew

This is a cooking method in which edamame beans are eaten with the skin on. They are seasoned with a strong soy sauce flavor and are delicious even when cold

How to make it

Rub the edamame with salt and rinse under running water to remove the fine hairs on the surface

Put edamame, enough bonito stock to cover the soybeans, sugar, and Happomibijin into a pot and bring to a boil

Cover with aluminum foil and simmer for about 3 minutes, then remove from heat and let cool.Return to heat and simmer for about 3 minutes, then cool, repeating this process three times

Bring to a boil over high heat until the water evaporates. Serve in a serving dish and it's done

  • salt
    A little
  • Bonito dashi water can be used as a substitute
    Appropriate amount
  • sugar
    1 tablespoon
  • Happo-mibijin (can be used as a substitute with soy sauce + mirin)
