Okra rubbing
This dish features okra as the main ingredient. The key is to chop the okra finely. When you combine it with the dashi stock, remove any bubbles that rise to the surface to create a beautiful dish

How to make it

Remove the calyx and stem from the okra, rub with salt, briefly parboil, then finely chop. Put the chopped okra and bonito stock in a bowl and mix

Add salt and mirin and mix again. Remove any bubbles that rise to the surface

Pour into a glass and top with Parmesan cheese to taste
