Okra rubbing

When the okra is peeled off, remove the stem, rub it with salt, and quickly boil it to the bottom and then chop it finely. Add the chopped okra and bonito soup stock in a bowl and mix.

Add salt and mirin and mix further. Remove any floating bubbles on the surface.

Pour it into a glass and pour it with Parmesan cheese if you like.
