Overnight dried whitebait

This is a quick and easy recipe for overnight dried fish that you can make at home. The flavor is doubled compared to eating it grilled as is, so if you have some whitebait, be sure to give it a try

How to make it

Put 3% salt water and kelp in a bowl and soak the whitebait for at least 5 minutes

Remove to a colander and let dry overnight

Place aluminum foil on a wire rack, lightly coat it with salad oil, and place the whitebait on top of each other, making sure they do not overlap

Bake in a preheated oven at 250°C for about 10 minutes until the surface is lightly browned

Place lemon slices in a bowl, arrange the whitebait on top, and finish by drizzling with lemon juice
