Mushroom yellowtail roll
This carpaccio dish is made with yellowtail amberjack wrapped around raw mushrooms. This time, I seasoned it simply with salt and sesame oil, but I also recommend adding your favorite sauce
How to make it

Remove the skin from the yellowtail and cut it into 5mm diagonal slices

Cut the mushrooms into slices about 5mm thick and wrap them in yellowtail fillets

Place the blanched onion, julienned carrot, and cucumber in a bowl, then top with [2]. Finish by sprinkling salt and sesame oil
