Strawberry jelly
Soak the gelatin in ice water.
Put A in a small pot, add gelatin just before it boils, dissolve it, strain it with a colander, pour it in ice water, and cool it.
Remove the stems of the strawberries, cut into small squares [2], mix and chill in the fridge for 30 minutes and solidify.
Make anglaise sauce. Heat the milk in a small pot to prevent it from boiling and add the vanilla beans.
Mix granulated sugar into the egg yolk, add [4] while mixing it, return to the pot, heat until it is thick and let cool.
Place [3] on a plate and pour [5] over it.
Add strawberry sauce and mint.
